Redbreast is a very special whiskey within the Irish Distillers fortified as it’s the only 12 year old Pure Pot Still available. It was first launched in 1939 as the brand name given to the pot still whiskey supplied by Jameson to whiskey bonders before bottling at the distillery became the norm in 1968. Stocks of whiskey in bonders stores petered out, and thus Redbreast all but disappeared until its re-launch by the distillery in the 1990s as a single pot still whiskey. Lincoln had been considering a rum cask finish, and the taste profile of our rye whiskey was a perfect fit. Our Inspiration for our new Global expression has been take from history 70-80 years ago, the time of the last family member owner of the distillery, Ian Hunter. Ian was one of the biggest influences in the history of Laphroaig indeed he was one of the first distillers to travel to bourbon county in the USA to identify new sources of casks that would give him greater consistency as well as new flavours. He later married this ‘new� style of Laphroaig with his traditionally matured (European cask) Laphroaig.
Inspired by his early work , we have used Oloroso sherry butts, straight American white oak (non-filled with bourbon), PX seasoned hogsheads, Quarter Casks and finally of course first fill Bourbon Casks. This varied cask maturation technique enabled us to create 6 new flavour combinations that were then tested with our FOL’s to choose their favourite style and indeed name. According to the testimony of his descendants, at the end of the 18th Century the Hacienda Botucal bore witness to Don Juancho Nieto Melendez’s burning passion for exploring the sources and processes responsible for the many alluring flavors of traditional beverages. He was particularly interested in artisanal production methods that, in spite of remaining relatively constant, were capable of yielding a wide variety of distinctly different outcomes. He was fascinated by the subtle complexities of the many environmental factors that affect the rum-making process, such as the weather and humidity of the tropics. A craftsman at heart, Don Juancho tirelessly looked for ways to refine his own product by sampling an exhaustive array of exotic liquors and rums. In fact his impressive collection of beverages became quite famous, coming to be known amongst his friends as ”The Ambassador’s Reserves,” a clear reference to its owner’s class and good nature. Don Juancho carefully studied the production methods employed in Jamaica, which at the time set the world standard for the manufacture and appreciation of rum. He would also draw inspiration from the islands of the Antilles, discovering and improving upon many of their distillation and aging secrets. The sugar mill, with its traditional method of crushing the sugar cane, was a both trusty tool and a constant companion to Nieto Melendez. He would observe its slow work in the same way a traveler might explore a map in search of new destinations, imagining the endless variations he could create by combining different cane juices in his rums. In time, his secret and astute combinations of ingredients, wood barrels and honeys would yield the robust and complex product that Don Juancho Melendez had always been searching for. The result was a rum that combined an unmistakable character and body with irresistible and subtle aromas, the triumphant expression of his untiring search for a spirit that would go on to captivate the world under the name Ron Diplomatico. His search for an exclusive flavor, color and aroma worthy of being served at the world’s finest venues is a living testament to his extraordinary tenacity and dedication. The name Clear Creek comes from the creek that runs through the pear orchard in Parkdale, Oregon. What we do A genuine artisan distillery reflects the best of the natural and agricultural resources of its region. Clear Creek Distillery has succeeded in doing this, making world-class eau de vie and grappa since 1985. This is classic eau de vie de poire. We use Williams (Bartlett) pears grown just an hour away in the Hood River Valley. We crush and ferment the whole pear and then distill the pure fruit mash in our German-made pot stills. It takes about 30 pounds of pears to make one 750ml bottle of Pear Brandy. This is still our best product and our best seller. The pear nose is intense, the taste is strong, but pure, and the aftertaste is clean with a surprisingly strong hint of pear. Grapes were brought straight to the winery and were pressed immediately, to preserve the precious Chardonnay aromas and flavors. The wine went through alcoholic and malolactic fermentation in French oak barrels, and ageing, for a total of just over 12 months before being bottled and resting in cellars for approximately 6 months. David only used 25% new French oak, to ensure that the fine character of his Meursault shines through. Les Narvaux is a lieu-dit vineyard next to Genevrieres and Poruzots, has very shallow soils and a southerly aspect. The grapes were all handpicked into small boxes, which ensured the berries remained intact until arrival at the winery.
